It takes a lot of people to create a cookbook: The writers, the recipe testers, the editor, the copy editor, the production manager, and the designer to name a few. And even though we all look at every word, we sometimes miss something. But in the end if something's wrong we take the blame - our names are on the book. It's unfortunate and we apologize for any mistakes that made it through.

Uncorrected proofs (called galleys) are sent to the media before the book is published. These galleys have many errors that get fixed before the book is put on sale. Sometimes these uncorrected proofs find their way into circulation via used book stores and ebay. The best way to make sure you have a correct recipe is to have an official copy of the published book.
