1 large, ripe pineapple
One 750 ml bottle vodka
1 vanilla bean, split lengthwise
2 heaping tablespoons sugar
Cut the rind from the pineapple and slice the flesh away
from the core. Cut into 1-inch chunks; place these with any
accumulated juices into a large covered jar or container.
Stir in the vodka (save the bottle to hold the liqueur, if
you want), vanilla bean, and sugar. Cover and set in a cool,
dark place for one week.
Strain the mixture and discard the vanilla bean. (Save the
pineapple to enjoy later on.) Pour the vodka back into its
original bottle and store in the freezer. Serve in chilled
shot glasses. Or serve over ice, topped with ginger ale, orange,
or cranberry juice.
